when i was talking to staff at Richard Branson's The Lodge in Verbier, they were clear they would do dégustation menus anywhere on property for no additional fee. seem to recall others mentioning properties like singita proactively offering similar. perhaps most inclusive properties require asking, even though they shouldnt. room service should be standard, and small inclusive properties should be able to serve anywhere. [and basically anytime]
