As for value for money with AC premium product, I am not certain it is there especially in the West. The J cabin on a CRJ is not worth hundreds of dollars over economy.

The latitude fares don't provide better service, it comes down to if its cheaper to pay rebooking fees or a higher upfront fee. That is going to depend on how frequently you adjust your plans.

I am disappointed WestJet did not proper business class seats in the new aircraft. That would have been the move in the market to keep AC honest.
AC has premium service over Westjet. Westjet, especially as a company based in Calgary YYC, for lack of better words it’s Dogshit! How do they call it a lounge. It’s more like a high school cafeteria.
AC however has a far superior lounge in both YYC and YYZ and most places. Comparing these airlines and there products are like comparing apples to oranges.
I’ll fly AC any day even if I have to pay for there J product.
