The problem with the third option is that SIN-SFO could be full in J by then, so the options could be "fly Y and arrive home at a reasonable time, or fly J and arrive home whenever we decide to rebook you."
This is a deeply troubling story. The ability to preserve an instrument upgrade when the situation warrants is absolutely key to dealing with UA's largely notional future schedules. I hope this is an example of a "MOLS" (Mistaken or Lying
Supervisor), and I hope they won't hold the original escalation against you, but, of course, you never know.
I also agree that it's best to wait a day to send that email.
