We were just in Hong Kong and stayed at the Ritz Carlton because it is in Central. I think it depends on which side you want to stay on. We have always stayed at the Pen but the travel over to Central gets to be a pain in the neck (due to business I would have to go every day but I also think the shopping is better in Central) so opted for Central and couldn't decide where to stay. We really liked the RC - view not as great as the Pen tower, but comfortable beds, great staff, not a bad view (but they are dredging yet again in the harbour) pretty hotel, nice rooms/baths and good location with a lot of things to do. I couldn't find anything wrong with it, and they gave us a one-bedroom suite for the price of a Deluxe Harbour View room.
Just on an aside re the Rolls, the back seat is pretty small and I felt cramped on the trips to the airport - really prefer the Mercedes.
