might SHA/PEK be more friendly for an asian to navigate than Europe, so the OP's mom can take AC's YUL direct? on the immigration side i'm sure the YYZ has vietnamese-speaking staff but i am not sure if the automated kiosks have a vietnamese language option. can't speak for YUL.
