No matter how you spin it, AA, DL, WN, pmVX, and Skywest are all within a percent or two of each other at SFO. Of course, DL and AA both have some regional operations which aren’t included in the mainline stats, so they’re a bit bigger than the stats indicate (but not by much, since both use mostly mainline at SFO). And of course, your departures count doesn’t count seats. Apparently AA and DL fly larger planes, on average, to get more capacity with slightly fewer flights.

And saying that AA only serves 8 destinations is of course misleading. Since SFO is VX’s main hub, they pretty much only serve the cities with nonstop service; that is, pmVX can only get you to 25 cities (by your count) total. Whereas with robust service to every hub except the perimeter-restricted DCA, AA serves literally every airport in their network one-stop out of SFO. VX obviously isn’t quite something to sneeze at out of SFO: they’re useful for much of the travel for a lot of people. But (in terms of network alone) they’re not clearly more useful than even AA, let alone UA, for many if any travelers.
The question is who has more capacity out of SFO, not in their entire network. Of course AA has a larger network. I include AA rj's to LAX, I don't think they have anything else. But of course if I missed anything feel free to augment the list, and we can also add the VX semi-weeklies and average it out to a daily.

AA only serves 8 direct destinations out of SFO: ORD 5x, JFK 5x, MIA 4x, PHX 5x, CLT 5x, PHL 3x, DFW 10x, LAX 12x on regionals = 37 mainline flights and 12 rj's daily

VX serves: NYC 8x, ORD 2x, FLL 2x, DAL 3x, SEA 1x, MCO 1x, PDX 3x, LAS 8x, SAN 5x, DEN 3x, AUS 2x, IND 1x, BNA 1x, PSP 4x, LAX 11x, WAS 3x, RDU 1x, PHL 1x, BOS 3x, MSY 1x, PVR 1x, SJD 1x, HNL 1x, OGG 1x, KUA 1x = 69 mainline flights daily, plus CUN

For the seat count, here's every route flown by a maxed out AA plane vs. the smallest VX plane
37 AA mainline A321s with 187 seats = 6,919, plus 12 CR9 with 76 seats = 7,831
69 VX A319s with 199 seats = 8,211
And more realistically it is:
69 VX A320s with 146 seats = 10,074

Again, this "fact" that AA is larger than VX out of SFO is quite questionable.
