Having read this thread though I am a little concerned as to how feasible it is to use these vouchers. This issue of having to book the outbound without the inbound sounds ridiculous.

im assuming New York might be an easier destination?
once you hit the 20k and bag your vouchers, then there is nothing stopping you moving your spend onto the Amex Plat. technically you should keep your BA Amex to avoid losing the voucher (if you cancel the BA Amex, they will say you will lose the voucher), but in practise i don't think it happens. didn't happen to me anyway.

There is generally enough availability around as long as dates are flexible. you only need to book outbound without the inbound if you're looking at T-355. Else within that, you book outbound and inbound as normal


New York generally has good availability.
