Not much to add but the St Paul's Hospital Christmas light display will be on in full bright light right across the street from the South Tower. Location is ideal as you have pointed out.

I would recommend the Vancouver Christmas market at the near the North foot of Burrard street (and one block west at Jack Poole Plaza) if visiting and needing entertainment at night.
