Personally, in Sydney I've enjoyed the Observatory hotel on the other side of the Rocks, with views of the container ship and cargo facilities, but still an easy walk to restaurants, the modern art museum, and ferries.It used to be an Orient Express Hotel and I was treated well with FHR bookings.

I would just add on - I just stayed last week at the Pier One Autograph Collection and thought the value for money was incredible (was there on business so wasn't my money but still). Location as good as the PH just without the view and at a fraction of the cost.
