Yes they will take your alcohol
At DOH all bags are x-rayed and the bottles/glass jars identified. Those bags are "tagged" perhaps magnetically, not visually. You must open the bags in their presence and all alcohol is confiscated. If in transit, you then produce the receipt upon leaving and you can take it out of the country on your exit flight. NO ALCOHOL CAN BE IMPORTED FOR PERSONAL COMSUMPTION. No exceptions.
As a Doha resident my port was confiscated (glass bottles) while they examined my p-butter in glass jars and let me keep the p-butter. Interesting that they identified the glass containers.
Yes, you can bring pork products (fresh/frozen) into Qatar. The source of the pork is irrelevant to Qatar Customs.
