I have flown many dozen segments between the USA and TPE on EVA (and FWIW many more dozen between SEA and other destinations in Asia such as NRT). These flight can get bumpy especially over Japan, but I have never once experienced "scary" turbulence of the variety described in this thread.

There are of course no guarantees but I would not consider this route especially prone to serious turbulence. Also, EVA is one of the very safest airlines in the world, as others have pointed out in this thread.
