It is their way out of committing to which wines are going to be on board...same as the Champagne now. Just a note to "ask flight attendant for today's selection".
Yes, as noted there are only ever two of each white / red listed, with some unspecified third supposed to be boarded. However, after having come across a handful of reports on FT in recent months of the third going missing (one quoted below), and a recent personal experience with EWR-NRT offering 'nada' for the choice wine, I am getting the sense these standards are slipping. Planning to write about the apparent walk-back.

I flew SFO-FRA last week and GVA-IAD yesterday, and I definitely noticed the downturn in meals in both directions. Outbound I had the short rib, which was sickly sweet - tasting kind of like char siu pork ribs. In both directions, the "sommelier's choice" wine was .... nada. There were only two wine choices for white and red. For the reds is was Wente cab or Colby blend and for the whites Wente chardonnay or a Riesling that I ignored as I rarely enjoy them.
Didn't Oscar once promise some FTer that they wouldn't walk back their wine improvements at a Polaris launch event? Time for that individual to do us all a favor and write in to Oscar reminding him of his promise.
