Bags coming off the aircraft are scanned and those not destined for LAS are routed to the correct UA or other carrier's flight. Every airport has a different pattern because at a place with only a few gates, it may be easier to lug a couple of bags to the next aircraft.

But connections at non-hubs are more than common.
