Just because we order a special meal doesn't mean we don't expect to receive the same level of food and service everyone else gets. Which is exactly what I wrote to Bastion and Ausband:

But not for those of us ordering special meals. What is served shows the lack of time and effort the catering companies put into VGML meals. "Just throw something on a plate and we're done" is the impression I always get. Unfortunately, the catering companies' understanding of how to prepare a satisfying meal for vegans seems to be lacking (or even non-existent). Not enough effort is put into creating meals that passengers will genuinely enjoy (or even identify what is on their plate)."
Don't DeltaOne menus usually have a vegetarian option (a pasta of some sort, IME)? If so, and if that met your requirements, it might make sense to stick with what is on the menu.
