Some datapoints:
Bought Nordstrom gift cards online. It shows pending on my statement as CS *NORDSTROM GIFT CAR and I did not get an email confirmation about using my offer.
Bought Amazon gift cards in-store at Staples. Immediately got an email saying the credit would post in 3-10 days. Will report back.

Edit: No statement credit yet, but I got this email from Chase:
