I think it's risky as well. It would be all on one ticket, but I don't know what BA would do if I miss the flight at Gatwick.
I don't have a plan B at this point other than trying to get an earlier flight to LHR. There is one, but no award seats available.
3 hours is right on the Minimum connection time that BA will sell a ticket for.
Many people will do the transfer in significantly less time.
What will BA do if you miss the flight at Gatwick kind of depends. If there was a significant delay to your inbound they will be aware and will protect you. They would also know about lengthy immigration Qs and you could say something to someone on your way out of heathrow to make them aware
If there is a snarl up on the M25 you should call while stuck in the traffic and make them aware.
If you just rock up at gatters 20 minutes late and there is nothing of note that would have delayed you then BA might assume that you have taken care of some personal business that has caused you to miss the connection.
