They do serve a full course from NRT to SGN. For a 5 hours and a bit flight the food is pretty generous in J. On HND to SGN it is slightly different as it departs at 01:30,there is a snack and then a breakfast before landing. I find the breakfast fine, but clearly smaller than the menu on the NRT flights. I have not taken the HAN flights recently, but it used to be quite similar to what is on the SGN flight now.
Yes they use the same menu with NRT-SYD/MEL, except the main dishes are served in a square plate rather than plating on a large dish, do you know why? and it is similar to NRT-MEL as well where main plates are served on square plate.
But I don't think it is full course as there is no amuse, and cheese/ fruit.
What i saw before from NRT to Vietnam is that they used to serve Japanese course with bento box with 9 different things inside which is similar to catering to America and Europe i guess.
