I read somewhere that even though I cancelled a month ago, AMEX internal may still show it in their records, as they can be slow to update.

Originally my plan was to wait to apply for the new plat mid 2018, but with the Citi Hilton transfer, I am going to have 7 Amex CC in Feb, so fear that might impact their willingness to approve me. I don't want to cancel any of the existing CC before this time next year.

Any thoughts on best strategy?
The "different flavors" of AMEX Platinum are considered different products. Whether AMEX shows your cancelled personal Plat internally or not should not matter if you're applying for a different product (admittedly, this is an educated presumption.) I'd apply now.

Also, are you saying you currently have six AMEX credit cards? I didn't think that was possible as AMEX limits you to either 4 or 5 (depends) credit cards.

These are not to be confused with charge cards, of which AMEX has no "hard" limit of which I'm aware. (The Plat and PRG, for example, are not credit cards - they are charge cards.)

(Apologies if you already are aware of the differences outlined above.)
