As an FO, the likelihood of there being two seats for upgrades at all, let alone two seats together, is pretty low. This also applies to a lesser degree to Comfort+ as well as First, so keep that in mind before you end up in middle seats two rows apart.
In your circumstance, I would always not request upgrades to either C+ or F during booking, and then when your window opens (T-24) if there are
upgrades available (not just
seats available), and suitable open seats, then request the upgrade.
