Guest must be an Accor Plus member and must present a valid membership card at check-in.
The Complimentary Night needs to be available and processed at the time of check in. If not, the member s rate of the day applies to the booking.
Moreso has anyone ever booked a night then turned up at said hotel /apartments (in my case this time ) and been refused the Complimentary Night thus having to pay Members rate of the day ?

Also on this occasion I intend to redeem it at The Sebel Maroochydore ( I won a free night a couple of months ago in the Accor competition hence i will also redeem my Stay Plus to make a weekend of it ) but when I go to book the single Stay Plus night it charges me $100 for the pleasure of booking MY FREE NIGHT !!!

or worse still if I want to book a 2 night stay here it then wants to charge me $130 for the pleasure of my NOT SO FREEN NIGHT and a second night back to back. Surely a free night should be that a free night . The clue is in the word FREE

It depends on what room categories are available. This may be a possible reason.
Free night applies to the basic room only; any room category above is cost+.
So could it be that the basic room is sold out and you are shown the next room category as lowest available category?
