You will need to advise at check in that you wish to use TWOV for your stay. You will then need to show your onward flight to HKG. Checkin will do the rest. Class of servide doesn't impact on TWOV. At PEK you'll need to show your onward ticket, hotel booking and have a contact number available. Paper printouts are preferable if you don't want them to take your phone off you for a long period.
I don't know if this is specific to departing from MFM or arriving in SHA but once I checked in with the Air Macau desk at MFM, I never had to show anyone a single document upon arrival at SHA. They supposedly sent all the information ahead. I had it out just in case but the immigration officer never asked for it.
