Will any of them really wow me or are Vegas buffets just glorified Golden Corrals?
The worst of the buffets are no more than Golden Corrals (not even glorified). The best of them may wow you with the variety of food but may not do so with the quality.

We've generally found Aria to be in the top tier, and that's our go-to, especially since we get freebies from the MyVegas website and app (worth checking out if you think you will return).

I think the Sterling Brunch is generally considered to be the best but, at $100 per head, it's a little rich for my taste.
