I know you pass border control in the first Schengen country you land in because every time I’ve flown to Stockholm I get stamped in Finland or Spain, but I can’t recall what happens in customs will I have to pass through in Lisbon and Oslo as well or only Oslo?

Customs is technically applicable at LIS and OSL, but in practice it's at OSL where you claim any checked bags and escort those past customs.
Note that currency reporting requirements are amongst customs control rules that may be applicable for even some intra-Schengen, international trips.
