As a US citizen you'll be fine. Most times they don't even scan your passport at immigration. Instead they look to make sure is valid, and simply stamp it. No questions. No need to have a hotel booking, nor register with police. Clearing into the Schengen area via AMS is one of the easiest processes ever for US citizens.
