If you think that immigration and security in the US is better than China it is because you are American. Foreigners are certainly better treated by Chinese immigration than US immigration. Not sure what mess you encountered at these two airports. It was always quite smooth for me.
Very good point, you are absolutely correct, I would not want to be a non-American dealing with TSA (and my view in general is that of someone with Clear and Pre-Check). The mess I encountered was the security following exit immigration checks: chaotic, slow lines ... took almost an hour at PEK and maybe 30 minutes at PVG. I realize merely two data points.
