I suspect that it is simply that you've selected dates for travel each way which happen to be expensive. On some random dates, open-jaw pricing is working as normal: LGW-FLL-LGW round-trip, LHR-JFK-LHR round-trip, LGW-FLL//JFK-LHR open-jaw, when priced on ba.com.
