Weather is a consideration, so do first the destinations where you want rescheduling flexibility. For example Milford Sound can be fogged in several days in a row; if at the end of your trip then no chance to defer by a day or 2 or 3. Its wonderful country but you have to be flexible.
Yeah on some level we'll just see whatever in whatever weather. When I went I had completely blue sky days in Milford sound -yet I hear rain makes it beautiful with waterfalls (but yeah, fog means you can't SEE much!)
What worries me is... HOW do we be flexible? Everything I've read says we need to be booking both accommodations and activities before they are all sold out. We can't really "wait until tomorrow" for things because we'll have to already move on - and it's a domino effect if we cancelled the next day's plan instead...
