In the past when I have earned a referral bonus, the points have shown up in my account one day after the new account was approved. For this most recent card, it was approved on the 10th, but the referral points haven't shown up yet (today is the 13th). I hope I don't have to fight with Amex on this. There's no way to prove your relative or friend used the link you e-mailed them.
