Indeed, it helps greatly to have the flight number for every segment you want, as well as the departure and arrival times.
For the return, assuming that this is a RT, I highly recommend leaving FCO in the afternoon and doing an overnight connection at AMS (or CDG, although getting downtown is more hassle there IME).
