I'm really struggling to combine this on one ticket, or even into a coherent trip.

It can be done by routing

YYZ - JFK - LAX - NRT - HKG on AA for about $4,500.

Routing to the west coast then the east doesn't work.

Alternatively you could do it as two tickets - a west to east coast TP run at your leisure, plus either YYZ-NRT-HKG (125 TP) on JL for $1,800 in premium economy or JFK-HEL-HKG for $3,000 or so in business on Finnair (280 TP). If you took the Finnair option then you'd only need three short-haul business flights.
