I don't tip in app but I don't see why not. The AMEX credit is (generally) applied to the first $15 in Uber charges to your account.

(Since I haven't had a ride that costs less than that since obtaining my plat, my credit is always expended on my first ride. I'm guessing in HNL you may get more than one ride from that credit.)
