I toured the same countries you have in mind in one shot...

Trip Report - The South Pacific Odyssey

The report is very detailed, but a heavy emphasis on the miles&travel as opposed to the activities. But I trust you will find a fair amount of useful info in there.

None of it is gay specific unfortunately because when it was written, it had a different audience in mind. This is not to say there weren't details that could have been added though. I am a bit short on time here so I'll add a few quick comments:

Tahiti is for couples, don't go there single, you will feel out of place. Tahitians are friendly people and there is no need for concern with any legality of anything, French Laws apply in all of French Polynesia, you are protected. The people in general are not very highly educated, hence they tend to be religious and traditional. One thing I always make an extra effort is to meet ordinary locals and talk to them and one striking thing I noticed was that Tahitians can be best described as friendly village people who are religious and not highly educated. For instance, on Tahiti, a local said male strip club is for ladies only, men are not allowed to enter. Then, a local on Moorea said the reason why the vanila plantation school has to be segregated along male / female is because you can't mix the two together, otherwise it will go 'bing bing boom boom' <- her words, not mind. Another believed homosexuality was introduced to Tahiti by Europeans whereas before that, it was all 'real men'. Well, we know that was wrong but that gives you an idea of the level of understanding and education on Tahiti.

Fiji - Officially, homosexuality is a crime. In practice, no body really cares. Fijians are very friendly people though in my personal views, the native Fijians aren't beautiful from a western perception. Outside of major cities like Nandi and Suva, it's very much village like. Strong platonic bondings can be observed like an indigenous society though there is a certain timidness in what's perceived beyond that. I'll elaborate when I got time.
