AA charges 10% of the adult fare for a lap infant. So in scenario 1 the OP would book their award ticket for 80k, and the lap infant would be $750. The DFW-HYD full Y fare on EY is around $7700, so it appears that's what AA is using in their calculations.
In scenario 2, they still buy one award ticket for 80k, but rather than paying AA $750 for a lap infant, they buy a separate ticket in discount Y for $950. I would happily spend the extra $200 to get an extra seat in this scenario.
To answer OP's question, AA will charge $150 to cancel a single award ticket and redeposit the miles. And any cancellation fees for the separate EY ticket would depend on the EY fare basis purchased, and any other fees charged (if any) by Expedia or Orbitz, etc.
