Yes, BA does allow upgrades in 4 forms:
- fare difference upgrade, always available subject to seats, often expensive, available by ringing up or paying at the airport.
- POUGs - pro active upgrades in Manage My Booking (see relevant thread in the Dashboard), this is usually the most cost effective way short of paying for the upgraded cabin at the lowest price in the first instance
- AUP - paid for upgrades at the airport, again there is a special thread on this
- AppUp - which is so new we haven't got a thread on it yet, but seems to be similar to AUP, and available in the App up to 1 hour or so before departure.
In addition you can upgrade with Avios if you have the right fare and sufficient Avios. It's a better system than AA's equivalent but you have to pay attention to the details of the scheme to get it to work well for you. All of these upgrade routes allow a one class jump in cabin only, with the exception of fare difference and AUP, where 2 cabin jumps are allowed, all services on this route have WTP (premium economy). For that reason buying WTP is often the sweet spot with more upgrade options, and perhaps a better chance of an involuntary upgrade.

As for which aircraft is best, ORD is getting the A380 and upper deck World Traveller on that is going to be the best option.

Thereafter I would guess the rank is going to be something like
- B747 Super J with the Panasonic eX3 IFE
- B777-300
- B777-200 versions with Thales i5000 IFE
- B747 52J seater
- B777-200 with Rockwell Collins AVOD.

Best not to call BA just British, it can upset the natives. BA for short, British Airways for long.

I think one point to bear in mind on the difference between Iberia and BA is that it is a slightly shorter route to LHR and BA handles this by doing the departure and arrival service more quickly than Iberia, so at least in theory you will get more sleep on BA on the night services. You also have AA services from ORD, and unusually they may have better timings for connections. AA goes to T3 in LHR, BA goes to T5 (both ends!).
