I normally always book things at the source when I can, but the issue here is that I'm actually under 25 and the United website doesn't give you that option. I know I can just pay the age differential at the counter but I like having things baked in from the outset. It makes accounting easier and avoids things like accidentally reserving a car group I'm not allowed to.

You need to book using your Hertz Gold Rewards account. On your Gold profile there are fields where you can specify whether you want to earn Hertz points or frequent flyer points. It's in the membership details section of your profile:
