i would recommend:
call a couple midsize wineries and ask them for a guide.
call a couple wine towns in the middle chianti country and ask them for a guide
ask your hotel(if not a hot .... name brand hotel)for guide.
ask your wine merchant back home for a guide.
stay for 2-3 days.
