They announced shortly after TO there was an ill passenger and asked if any Dr on board. I assume the passengers condition didn't warrant a turnaround at that point. A few hours later we made the turn South to HNL.

I was listening to the tower as we departed HNL. The Cathay pilot thanks the staff for the help and said that he wishes he could say they (CX) would be returning soon he didn't think that was likely.

Originally when we left HNL we were going to Osaka. Around an hour into it they announced they were able to make it as far as TPE before needing a crew swap due to the crew being over hours.

Don't mind this sort of delay. The two stops were both reasonably quick (TPE only an hr). Although had I been in the back for 21 hrs (board to deplane) I may have needed to be offloaded as well...
