Japan "Off the Beaten Path" In November

Inspired by this thread, http://www.flyertalk.com/forum/japan...apan-trip.html , I'd like some advice on an off the beaten path trip in November given the weather this time of year.

About us: Young gaijin couple. Interested in nature, culture, history, good food. I can get by with basic/passable Japanese. Trying not to break the bank ("Dormy Inn" level hotels). Never driven in Japan before but open to renting a car if it's easy/safe.

I've read that November is crowded because of the fall foliage. What parts in particular should be avoided if we don't want to deal with big crowds and marked-up hotels?

Anything full of the LCC / Chinese tourists mentioned in the other thread seems like a total turnoff.

I see there's a sumo tournament Nov 12-26 in Fukuoka. That would be fun.

Some day hiking or even an overnight hike staying in lodging would be fun.

We're using AA awards. Looks like flying into or out of NRT or KIX would have decent availability in November.

I hope I gave enough info; let me know if this inquiry is too general. And ideas would be much appreciated. Thanks so much.
