Maybe the blogger was just unlucky? It only takes 1 bad flight to turn you off forever. I had a bad flight 7 years ago from NRT to ORD on AA and that experience is what drove me to United. (I asked for water and the grumpy FA asked me 'Why?') On the other hand I just had one of the best FA experiences 2 days ago from SFO to ORD on UA, so it is difficult to understand this bloggers experience. Just unlucky
