Dismissive service is a common complaint when it comes to France (or other EU destinations, especially during high season). A different discussion but worth mentioning is the fact that I have seen too many times that dismissive service generally starts in France when staff is required to speak anything else than French. Best on the coastline? Per your opinion? Eden Roc has a massive beach like no others (IIRC the ones you mention don't even have one?). Food is a highly subjective matter, not to mention that the South of France has more options to dine out than I could possibly think of.
I have never encountered dismissive service at Eden Roc and the food (but we tend to dine out) was more than ok for my standards.
I am bi-lingual, so no problem with communication either. If I compare attitudes and food at Eden Roc with Cap-Ferrat or La Réserve, the gap is huge. Even when there are dozens of great restaurants in the area, I still expect to be able to dine well in my hotel. I also expect a certain level of genteel service, which is, aparently, still possible in France and other parts of Europe!
You talk about the hotel's 'massive beach', yet it is merely an area of sand packed with cheek-by-jowl loungers - one of the ugliest sights imaginable, with wet discarded towels everywhere.
I guess it is a matter of taste.
