One way would be to build an itinerary; place it on hold; call AA and ask them to apply the dollar value available on the cancelled ticket to the new itinerary. You'll need the original ticket number, NOT the record locator number.

I believe that travel on the new itinerary must begin prior to one year from the date you purchased the cancelled ticket.
