Can't I apply the value of a cancelled ticket (upon payment of the $200 change fee) to a new ticket? Can that be done online, or do I have to call AA? I am Platinum, if that makes a difference.

You'll need the ticket number, not the old confirmation code. Put your new reservation on hold online, then call in to get it ticketed
