You can get a longer layover by doing your booking as a multicity itenary.
So rather than putting LHR - BKK (return) you would use the multicity tool
and specify all the legs where you wanted more granuality over timings.

LHR - DOH
DOH - BKK
BKK - DOH
DOH - LHR

Having a stopover may affect the fare calculation.
