Hello kingy2000. Personally, I wouldn't be overly concerned. The Dollar website has the following information:
What is a ‘cashless’ toll road?
In some states, there are cashless roads where there is no option to pay cash in a traditional tollbooth. The license plate of vehicles without a registered toll pass is captured by camera and the rental company is billed for the toll. As per the terms of the rental contract, these toll charges, plus an administrative fee per event, is billed to the credit card on file.

We do have lots of toll roads here in Florida that are cashless. The system to bill the tolls back to the registered owner of the vehicle (Dollar) isn't quick. But, once they see the toll, they should bill the credit card attached to your rental for the amount plus the administrative fee.

I don't think you need to worry. But, if you want, you can try to contact Dollar in the UK via "Customer Service (non UK rentals only)" on this page: https://www.dollar.co.uk/contact-us.htm

Clicking on the link will take you to a Thrifty Car Rental webpage with a form. If you don't know, Dollar and Thrifty are all part of Hertz. So, it's not some phishing scheme. Hopefully you'll get a response that confirms that your toll charges will be paid via your credit card.
