I'm not sure if it works with your schedule, but Istria is an amazing part of Croatia that I highly recommend. Rovinj is beautiful, and there's a lot of outdoors/biking activities. The archeaological/Roman area of Pula and the harbor would neat for me as a history nerd. And then the small towns and wineries further north (Momjan, Koslovic winery, etc) are all wonderfully set in the rolling Istrian hills.

We did Venice to Dubrovnik earlier this year at the end of April/first of May, and drove between Roving->Split and Split->Dubrovnik and it wasn't that difficult getting around.
How long did it take you to go Rovinj to Dubrovnik?
