Thanks for the information. I thought about changing my departure flight in order to take advantage of a good business class fare, but I don't feel like going through the hassle this time.

Unless you come to visa agency, there is no procedure to extend your departure date for E-Visa. In case you come to visa agency, the fee is quite high, should be vary from $80-$100 for extension.
There are 3 options for your consideration:
1. Over stay 1 day and pay a small administrative fine at the airport, it should be less than $25.
2. Re-apply for another E-visa with a new departure date; and
3. Apply for a new VOA.
