Not all restaurants are open 7 days a week. The French restaurant was the best of the worst. It definitely feels like a 4 star property but once you leave the gates you quickly realize you're in Mexico.
I'm far from a foodie but I'm not exactly of low tastes. Fortunately, I'm not all that picky.
I thought the breakfast buffet was fine and certainly comparable (if not better) than a breakfast buffet at a Hyatt in the US. If you are expecting great french pastries for breakfast, you will be disappointed.
I enjoyed the grilled shrimp tacos from the snack bar a lot for lunches. Certainly not gourmet, but I was a fan, and the chips, salsa, and quac were perfectly fine. The big grills by the pool also put some some decent stuff for lunch.
We have picky kids, so we ate in the Italian restaurant a lot. It is an Italian restaurant in Mexico, not Italy. My wife and I were fine with all the pasta dishes we had.
The South American and Asian restaurants were a bit underwhelming, but I wouldn't call the food "not good".
All of the steaks I had were on the tougher side, but the flavor was very good.
I really like food, and I really like good food, but its an all-inclusive far from Rome or Paris. I certainly did not go lacking for food.
Also, the coffee shop has decent snacks and ice cream, and there are crepes in the evenings by the coffee shop.
