It's maybe not so good for an 11:30pm arrival but I've found the Holiday Inn Express Sloterdijk to good compromise for a quick run into the city and an early flight the next day. Right at the Sloterdijk station, you're 10 minutes from Schiphol and 5-6 minutes from Centraal Station.
