They oversell just like anyone else does, and look for volunteers before refusing anyone access to the aircraft.

Of the last 6 flights I took, 4 were oversold enough that they asked for volunteers and I was first on the bump list. Only once did they need me, so they're having enough no-shows to make the system work pretty well in my situations.
