There's also the Renaissance 57 - a hotel that I've had a couple wonderful stays at in the past. I like the boutique feel, excellent lounge, good restaurant, overall calm vibe of the place. It's farther east...57th & Lex. I really like that neighborhood...it's approximately where I do most of my NYC stays regardless of hotel brand.
Only catch is that is has some really odd-shaped rooms. Even in my Gold/Plat years, always with something upgraded above the base room, it can be tight. There's certainly room to set up a Pack & Play somewhere, but then it'll be *really* tight.
I tend to Lyft everywhere once I'm in NYC, so I can't comment on how convenient the subway is. I would definitely use Uber/Lyft from the airport with all that luggage: if you want to "experience" the subway, do it once you've checked into the hotel and dumped off the bags.
In NYC, Lyft is an approximate equal to Uber. (This is true in a lot of large U.S. cities.) I have both apps on my phone and will check either one as necessary. Might be worth a download and account setup just to have the option.
